Carmen’s Post – Delicata Squash
Happy Thanksgiving to all of you! My family loves squash and this year we were introduced to the Delicata squash. It certainly did not disappoint! A Delicata squash might be familiar to you as a Sweet Potato squash or Bohemian squash. It is defined by its sweet flavor and “delicate” skin. The best part about them is that you can eat the skin, saying goodbye to tiresome peeling! For a delicious and simple recipe try it this way:

Preheat oven to 425 degrees

Cut ends off of Delicata. Cut in half length-wise (like a boat) and spoon out seeds.

Cut into half-moon shaped pieces

Add other vegetables you would like roasted (sweet potatoes diced, turnips, carrots, peppers, etc.) Toss lightly in olive oil. Season with salt and pepper.

Place on a roasting pan or in a casserole dish. I like to sprinkle chopped fresh Rosemary on top or other fresh herbs that I might have on hand.

Roast at 425 degrees for approx. 20 min or until desired tenderness. Toss them about ½ way through cooking time.
