Carmen’s Post-Healthy Green Salad

Happy St. Patrick’s Day!  How are you and your family celebrating?  Before my family breaks out the corned beef, green cabbage, and Hannah sweet potatoes tonight, I thought a sensible lunch would be in order.  Celebrating all that is GREEN today, I made a fabulous salad that will not disappoint in its healthiness.  Contents in the picture include:
  • Healthy GREENS and HERBS
  • Smashed Chickpeas or “Faux Tuna” salad with PEPPERCINIS, CELERY, carrots, onion, red/orange/yellow peppers, AVOCADO MAYO, fresh squeezed lemon, salt, pepper, cayenne, and dry mustard
  • Sprinkle of Feta cheese, GREEN OLIVES, Kalamata olives, tomatoes, and chopped GREEN DOLMAS
