Meal prep makes sticking to your healthy eating goals much easier. Start small with the one meal that pains you the most. Schedule when you will make the meal and how far in advance you can prepare certain items. For example, chicken roasted ahead of time can be kept refrigerated for several days. I typically roast chicken 2-3 times per week as needed for salad prep. Find a handful of recipes you can depend on and rotate them frequently to avoid burn out. With warmer weather rapidly approaching, farm fresh local vegetables will be in abundance for Hunterdon County. There are many great recipes online for creating healthy bowls and salads with lots of variety. Get creative, organize a recipe list, and start prepping.
